The Yummy Ingredients!
- Watermelon,diced
- Cucumber, diced
- Jalepeno, minced
- Cilantro, chopped
- Mint (if you want) chopped
- 1 small or half of a large onion (white or purple)
- Lime zest or Lime juice
- Salt & Pepper for taste

Here's the fun part, dice your watermelon as chunky or bite sizey as you wish.
Same with the cucumbers. When you get to your jalepnos make sure to remove the seeds if you aren't going for that extra spice. I'm a wimp so out they go!
As for the cilantro i pretty much add as much as i possibly can. i just love it!
When it comes to the mint, i have never had it on hand but the original recipe calls for it so i put it in here. I have tried this recipe with both a white & red/purple onion and i most definitely would suggest the white onion it just gives the salsa a better over all flavor in my opinion. As much as i would love to just zest my little heart away on limes but most often i don't have fresh limes on hand so this lime juice really does the trick! sprinkle some salt & pepper to your taste & you are good to go! Top your favorite grilled or baked fish, burger or just eat it with chips!
